for mother's day, i made white cupcakes: 1/2 with raspberry filling & whipped cream frosting, the other 1/2 i used vanilla frosting with mini-chocolate chips. i love using the silver foil cups - they are much nicer looking i think. for the raspberry filling, i used the baster in the bottom left corner of the picture below to inject the jam and i did this while the cupcakes were slightly warm, so i think that helped make it so easy. it was also, um, really fun. yeah, that's right. it was.
i ended up buying a lot of sugar crystals that i ended up not using. i preferred the white-chocolate shavings and red raspberries topping most of the cupcakes to the sugar crystals.
this is right after i injected the cupcakes...i heated up the jam first, then put it directly in the top of the baster...then injected into the warm cuppies!
the frosting covered up any evidence of the surprise jam inside! [except...i told everyone beforehand...so, no one was surprised anyway]
