pierogies & fun

i'm excited about this weekend. tonight we have small group for church, tomorrow i'm going to head to the east side to hopefully pick up the LAST FRAME needed for our living room [to complete a 4-picture set], print out pictures, maybe get my new license [if i can find my paperwork], my boss's 50th birthday party is tomorrow night and then we are having a small St Patrick's Day party at our house after!! also, josh and i are [hopefully] going to get a new CD player for my car [FINALLY] on Sunday.

i also wanted to post some pictures of a yummy "meal" kc and i made a few weeks ago. we were inspired to make this "pierogi pizza" from going to the Church Brew Works in Pittsburgh about a year ago.



to make this pizza, we used premade crust and premade cheddar mashed potatoes. we sautéed butter and onions [cut up small for kristen], mixed it and shredded cheddar with the potatoes and let it set in the fridge for 20 minutes or so. then spread over the pizza crust.





then we sprinkled a blend of italian cheeses - mozzerella, provolone, parmesean and romano - over the top and baked at 400 degrees for maybe 20-25 minutes.



we learned from Racheal Ray that you should let your pizza sit for a minute or two so all your ingredients don't spill out everywhere. it cut nicely and tasted pretty good! we had to add a little salt and i could've used a little more butter taste in it.

we then ate it for the next 5 days.

I ate (and drank) at the Church Brew Works a couple years ago. Good food, better brews. Your pizza makes me hungry!
